Mobile food vendors are used to challenging situations: serving delicious fare in huge volumes from simple, often cramped kitchens is a lot harder than it may look. Task those same vendors with making use of traditional Māori culinary methods and ingredients, and the result is Puna Kai – one day of fusion cooking celebrating the kitchens of the city and the history of its native people.
